Just trying to figure out how these guys are supposed to work.

If the little Gluttony demon swallows a model, it immediately turns into the big demon, right? 

Now, once the model inside the demon is killed, does the big demon turn back into the little one?  Or is it stuck as the big demon for the rest of the game?

Follow-up question.  When he takes damage in the combat round that he swallows a model, does the damage go onto the old profile and get immediately healed when he transforms, or does it go on the new profile?  I'm guessing its like drain life where damage gets done first, then extra effects happen, but I don't know for sure.

yes.
Damages are applied first, then special states are applied at the end of the fight (swallowed, knockdown, etc.).
So the Glutton, if still alive when damages take place, swalllow the ennemy model with full health on his "fat" profile.
